Method

Preparing the Corned Beef

    Slow-Roasting the Corned Beef

    Preheat your oven to 300°F (150°C). Place the corned beef brisket in a roasting pan and cover it with foil. Roast for about 3-4 hours, or until it’s tender and easily pulled apart with a fork. Remove from the oven and let it rest for 15 minutes before pulling it apart.

Cooking the Hash

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Cook the Bacon and Sausage

    In a large skillet, heat the olive oil and butter over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Add the sausage and cook until browned and cooked through, about 5 minutes.

    Combine Ingredients

    Add the cooked potatoes and pulled corned beef to the skillet with bacon and sausage. Season with salt, black pepper, garlic powder, onion powder, and dried thyme. Stir well to combine and cook for an additional 10 minutes, allowing the hash to get crispy on the bottom.

Finishing Touches

    Add Cheese

    Sprinkle the shredded cheddar cheese over the top of the hash. Cover the skillet with a lid and cook for another 2-3 minutes until the cheese is melted.

    Remove from heat, and serve hot. Enjoy your Dublin-style slow-roasted corned beef hash!
