Corned Beef Hash Skillet Recipe

    Prepare the Potatoes

    Wash and dice the red skin potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 10 minutes or until slightly tender, then drain and set aside.

    Chop the Vegetables

    Dice the green bell pepper, onion, and slice the mushrooms. Set aside.

    Shred the Corned Beef

    Using a fork or your hands, shred the slow-roasted corned beef into bite-sized pieces.

Cooking

    Heat the Skillet

    In a large skillet, heat the olive oil over medium heat.

    Add the Vegetables

    Once the oil is hot, add the diced onion and green bell pepper. Sauté for about 3-4 minutes until they start to soften.

    Add the Mushrooms

    Add the sliced mushrooms to the skillet and continue to cook for another 3-4 minutes until the mushrooms are tender.

    Combine Ingredients

    Stir in the partially cooked red skin potatoes and shredded corned beef. Season with salt, black pepper, garlic powder, and paprika. Mix well to combine.

    Cook Until Crisp

    Cook the hash for about 10-12 minutes, stirring occasionally, until everything is heated through and the potatoes are crispy.

Serving

    If desired, top each serving with a fried egg and sprinkle with chopped fresh parsley. Serve hot.
