Prepare the Potatoes
Wash the red skin potatoes thoroughly. Cut them into small cubes.

Cook the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes, sprinkle with salt and pepper, and sauté for about 10-12 minutes or until they are golden brown and cooked through. Stir occasionally.

Cook the Eggs
In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny side up, over easy, etc.).

Prepare the Toast
While the eggs are cooking, toast your choice of bread slices until golden brown.

Serve
On a plate, serve a generous portion of the corned beef hash topped with the fried eggs. Garnish with fresh parsley and serve with toast on the side.
