Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the corned beef into small cubes. Peel and cube the potatoes into small pieces. Finely chop the onion and bell pepper.

  2. 2

    Cook the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Cooking

  1. 3

    Sauté Vegetables

Add the remaining tablespoon of olive oil and 1 tablespoon of butter to the skillet with the potatoes. Once melted, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened.

  2. 4

    Combine All Ingredients

Stir in the diced corned beef, garlic powder, black pepper, and paprika. Mix well to combine all ingredients.

  3. 5

    Cook the Hash

Spread the mixture evenly in the skillet and let it cook undisturbed for about 5-7 minutes until it is crispy on the bottom. Stir occasionally to prevent burning.

  4. 6

    Optional Eggs

If adding fried eggs, cook them in a separate pan to your desired doneness while the hash is finishing up.

Serving

  1. 7

    Plate the Dish

Once the corned beef hash is crispy and golden, remove from heat. Serve hot with optional fried eggs on top and garnish with fresh parsley if desired.
