Prepare Quinoa

Rinse 1 cup of quinoa under cold water in a fine-mesh strainer to remove any bitterness.

In a medium saucepan, combine the rinsed quinoa, 2 cups of water, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.

Once the quinoa is cooked, remove it from heat and fluff it with a fork. Stir in 2 tablespoons of unsweetened cocoa powder and 2 tablespoons of maple syrup until fully combined.

Slice the banana and prepare the blueberries and strawberries. Set aside.

In a dry skillet over medium heat, toast 1 tablespoon of coconut flakes until golden brown, stirring frequently. Remove from heat and let cool.

Chop the walnuts and pecans into small pieces.
