    Wash and cube the red skin potatoes into bite-sized pieces. Boil them in salted water for about 10-12 minutes or until fork-tender. Drain and set aside.

    Cook the Breakfast Sausage

    In a skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add chopped green bell pepper, onion, jalapeño, and diced tomato. Sauté for 5-6 minutes until vegetables are tender.

    Combine Ingredients

    Add the cooked breakfast sausage and boiled potatoes to the skillet with sautéed vegetables. Stir to combine and heat through for an additional 2-3 minutes.

    Add Cheese

    Sprinkle Monterey Jack cheese over the mixture and cover the skillet. Allow it to melt for about 2 minutes.

    Prepare Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices or cubes.

Chipotle Aioli Preparation

    Mix the Aioli

    In a small bowl, combine mayonnaise, chipotle peppers in adobo sauce, lime juice, garlic powder, salt, and black pepper. Whisk together until smooth.

    Spoon the sausage and vegetable mixture into a bowl, top with slices of avocado, and drizzle with chipotle aioli before serving.
