    Cook the Potatoes

    In a large pot, bring water to a boil. Add the cubed red skin potatoes and cook for about 10-15 minutes until fork-tender. Drain and set aside.

    Cook the Sausage

    In a large skillet over medium heat, add the breakfast sausage. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks, about 5-7 minutes.

    Sauté the Vegetables

    In the same skillet used for the sausage, add the diced onion, green pepper, and jalapeño. Sauté over medium heat until softened, about 5 minutes.

    Combine Ingredients

    Add the cooked potatoes and tomatoes to the skillet with the sausage and sautéed vegetables. Stir well to combine and heat through for about 2-3 minutes.

    Add Cheese

    Sprinkle the shredded Monterey Jack cheese over the mixture in the skillet. Cover and let it melt for about 2 minutes.

Serving

    Plate the Bowl

    Spoon the mixture into bowls. Top with sliced avocado and drizzle with chipotle aioli before serving.
