Preparing the Chicken Fingers

Prepare the Chicken
Cut the boneless, skinless chicken breasts into strips, about 1 inch wide.

Bread the Chicken
Dredge each chicken strip in flour, shaking off excess, then dip in the beaten eggs, and finally coat in the seasoned bread crumbs. Place the breaded chicken strips on a plate.

Fry the Chicken
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the breaded chicken strips in batches, frying until golden brown (about 4-5 minutes per side). Remove and drain on paper towels.

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips for fries.

Fry the Potatoes
In a separate large skillet, heat vegetable oil over medium-high heat. Once hot, add the potato strips in batches and fry until golden brown and crispy (about 5-7 minutes). Remove and drain on paper towels, then sprinkle with salt.
