Almond Mascarpone Cheese

Candied Pecans

Grilled Bananas

Banana Rum Caramel Sauce

Optional Meat

Method

Prepare the Candied Pecans

  1. 1

    Make the Candied Pecans

In a skillet over medium heat, melt the butter. Add the pecans, sugar, and cinnamon, stirring continuously for 5-7 minutes until the nuts are toasted and caramelized. Remove from heat and let cool on parchment paper.

Prepare the Banana Rum Caramel Sauce

  1. 2

    Prepare the Sauce

In a saucepan over medium heat, combine brown sugar and heavy cream. Stir until the sugar dissolves. Add butter and banana liqueur or rum, bringing to a simmer. Cook for an additional 5 minutes until the sauce thickens. Remove from heat and set aside.

Prepare the Almond Mascarpone Cheese

  1. 3

    Mix the Cheese

In a bowl, combine mascarpone cheese, almond extract, and powdered sugar. Mix until smooth and creamy. Set aside.

Grill the Bananas

  1. 4

    Grill the Bananas

Slice the bananas in half lengthwise. In a skillet, melt the butter over medium heat. Place the banana halves cut side down and grill for about 2-3 minutes until caramelized. Remove from heat.

Prepare the French Toast

  1. 5

    Cook the French Toast

Heat a large skillet or griddle over medium heat. Dip each slice of ciabatta bread into the almond mascarpone mixture, ensuring both sides are coated. Place the bread on the skillet and cook for 3-4 minutes per side until golden brown.

Assembly

  1. 6

    Assemble the Dish

On a plate, stack the French toast slices. Top with grilled bananas, candied pecans, and drizzle with the banana rum caramel sauce. Serve warm with your choice of meat on the side.
