In a saucepan over medium heat, combine brown sugar and heavy cream. Stir until the sugar dissolves. Add butter and banana liqueur or rum, bringing to a simmer. Cook for an additional 5 minutes until the sauce thickens. Remove from heat and set aside.

Cook the French Toast
Heat a large skillet or griddle over medium heat. Dip each slice of ciabatta bread into the almond mascarpone mixture, ensuring both sides are coated. Place the bread on the skillet and cook for 3-4 minutes per side until golden brown.
