Method

Preparing the Sandwich

  1. 1

    Toast the Muffins

Begin by toasting the vegan English muffins until golden brown. Set aside.

  2. 2

    Cook the Vegan Sausages

In a skillet over medium heat, cook the vegan sausages until they are heated through and have a nice browning on the outside. This should take about 5-7 minutes.

  3. 3

    Prepare Vegan Eggs

If using scrambled vegan eggs, prepare them according to package instructions. If using vegan egg patties, cook them in the skillet for about 3-4 minutes on each side until heated through.

  4. 4

    Assemble the Sandwich

On the bottom half of each toasted muffin, layer the cooked vegan sausage, followed by the vegan egg, a slice of vegan cheese, tomato slices, and avocado slices. Top with the other half of the muffin.

Preparing the Potatoes (Optional)

  1. 5

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 6

    Season the Potatoes

In a mixing bowl, toss the cubed potatoes with olive oil, salt, pepper, and paprika until evenly coated.

  3. 7

    Bake the Potatoes

Spread the seasoned potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
