Burrito Filling

Prepare the Vegan Eggs
Crumble the firm tofu into a bowl. Add turmeric powder and nutritional yeast, and mix well to combine. This will give the tofu a yellow color and cheesy flavor.

Cook the Vegetables
In a non-stick skillet, heat a little oil over medium heat. Add the diced onion and green bell pepper. Sauté for about 5 minutes, until they are soft and slightly caramelized.

Combine Ingredients
Add the crumbled tofu mixture and vegan sausage to the skillet. Cook for an additional 5-7 minutes, stirring occasionally until heated through and slightly crispy.

Prepare the Ranchero Sauce
In a saucepan, heat a bit of oil and add the diced onion and minced garlic. Sauté until the onion is translucent. Add the canned diced tomatoes, cumin, chili powder, and salt. Simmer for 10-15 minutes.

Prepare the Potatoes
In a bowl, toss the cubed potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until golden and crispy.

Assemble the Burritos
Take a flour tortilla and spoon a generous amount of the filling in the center. Fold the sides over and roll it up tightly. Repeat with the remaining tortillas.
