Method

Preparation of Filling

  1. 1

    Cook the Sausage

In a large skillet over medium heat, add the breakfast sausage. Cook until browned and cooked through, breaking it apart with a spatula, about 5-7 minutes.

  2. 2

    Sauté the Vegetables

Add chopped onion and green bell pepper to the skillet with the cooked sausage. Sauté for an additional 3-4 minutes, or until the vegetables are softened.

  3. 3

    Scramble the Eggs

In a bowl, whisk together the eggs. Pour the eggs into the skillet with the sausage and vegetables. Stir gently until the eggs are fully cooked, about 3-5 minutes.

  4. 4

    Add Cheese

Sprinkle the cheddar cheese over the scrambled eggs and stir until the cheese is melted. Remove from heat.

Assembly

  1. 5

    Prepare Tortillas

Warm the flour tortillas in a dry skillet or microwave until pliable.

  2. 6

    Fill the Tortillas

Place a generous portion of the egg, sausage, and cheese mixture onto the center of each tortilla.

  3. 7

    Roll the Burritos

Fold the sides of the tortilla over the filling, then roll from the bottom to secure the filling inside. Repeat with remaining tortillas.

Serving

  1. 8

    Prepare Potatoes

While assembling the burritos, you can prepare your choice of potatoes (e.g., diced and sautéed, roasted, or hash browns). Cook until golden and crispy.

  2. 9

    Serve

Place each burrito on a plate. Serve with sour cream, guacamole, house-made ranchero sauce, and your choice of potatoes on the side.
