Mix the Espresso Rub
In a medium bowl, combine brown sugar, espresso powder, smoked paprika, cayenne pepper, black pepper, and salt. Mix well until all ingredients are evenly distributed.

Prepare the Bacon
Place the thick-cut bacon strips on a baking sheet lined with parchment paper. Make sure they are laid out flat and not overlapping.

Apply the Rub
Generously sprinkle the espresso rub mixture over the bacon strips. Ensure that each strip is well-coated on both sides.

Bake the Bacon
Preheat your oven to 375°F (190°C). Place the baking sheet with the bacon in the oven and bake for 20-25 minutes, or until the bacon is crispy and caramelized. Keep an eye on it to prevent burning.
