In a mixing bowl, combine the espresso powder, brown sugar, smoked paprika, black pepper, cayenne pepper, and sea salt. Stir well until all ingredients are evenly mixed.
Cooking the Bacon

Preheat the Oven
Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil for easy cleanup.

Arrange the Bacon
Place the thick-cut bacon strips on the prepared baking sheet, making sure they do not overlap.

Apply the Rub
Generously sprinkle the espresso rub mixture over the bacon strips, ensuring they are well coated on both sides.

Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and caramelized, keeping an eye on it to prevent burning.
