Vegan Eggs

Method

Vegan Eggs

  1. 1

    Prepare the Tofu

Drain and press the tofu to remove excess moisture. Crumble the tofu into a bowl.

  2. 2

    Season the Tofu

Add turmeric, nutritional yeast, black salt, and black pepper to the crumbled tofu. Mix well.

  3. 3

    Cook the Vegan Eggs

Heat olive oil in a skillet over medium heat. Add the seasoned tofu and cook for about 5-7 minutes, stirring occasionally. Add chopped spinach and tomatoes, and cook for an additional 2-3 minutes until the spinach is wilted.

Vegan Sausage

  1. 4

    Prepare the Sausage

In a skillet, heat olive oil over medium heat.

  2. 5

    Cook the Sausage

Add the plant-based sausage links to the skillet. Sprinkle garlic powder, onion powder, and paprika on top. Cook according to package instructions, usually around 6-8 minutes, turning occasionally until browned.

Vegan Pancakes

  1. 6

    Mix Dry Ingredients

In a bowl, combine all-purpose flour and baking powder.

  2. 7

    Mix Wet Ingredients

In another bowl, whisk together almond milk, maple syrup, and vanilla extract.

  3. 8

    Combine Ingredients

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  4. 9

    Cook the Pancakes

Heat coconut oil in a non-stick skillet over medium heat. Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden brown.

Potatoes & Toast

  1. 10

    Prepare the Potatoes

Dice the potatoes into small cubes. In a bowl, toss with olive oil, salt, and any other desired seasonings.

  2. 11

    Cook the Potatoes

Spread the seasoned potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until crispy and golden, stirring halfway through.

  3. 12

    Toast the Bread

While the potatoes are cooking, toast the bread slices until golden brown.
