Potatoes & Toast

Method

Vegan Eggs

  1. 1

    Prepare the Tofu

Drain the tofu and crumble it into a bowl using your hands or a fork. It should resemble scrambled eggs.

  2. 2

    Mix Ingredients

Add turmeric powder, nutritional yeast, and kala namak to the crumbled tofu. Mix well until evenly combined.

  3. 3

    Cook the Mixture

Heat olive oil in a non-stick skillet over medium heat. Add spinach and cherry tomatoes, sautéing for 2-3 minutes until the spinach wilts.

  4. 4

    Combine with Tofu

Add the tofu mixture to the skillet and cook for an additional 5-7 minutes, stirring occasionally until heated through.

Vegan Sausage

  1. 5

    Cook the Sausage

In a separate skillet, heat olive oil over medium heat. Add vegan sausage links and cook for about 5 minutes on each side until browned.

  2. 6

    Add Maple Syrup

Drizzle maple syrup over the sausages in the last minute of cooking for added flavor.

Vegan Pancakes

  1. 7

    Mix Dry Ingredients

In a bowl, combine flour, baking powder, and a pinch of salt. Whisk together until well mixed.

  2. 8

    Combine Wet Ingredients

In another bowl, mix almond milk, maple syrup, and vanilla extract.

  3. 9

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined; don’t overmix.

  4. 10

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

Potatoes & Toast

  1. 11

    Prepare the Potatoes

Wash and peel the potatoes (if desired). Cut them into cubes or wedges.

  2. 12

    Cook the Potatoes

Boil or roast the potatoes until tender, about 15-20 minutes for boiling or 25-30 minutes for roasting in an oven at 400°F (200°C). Season with salt and pepper to taste.

  3. 13

    Toast the Bread

While the potatoes are cooking, toast the bread slices in a toaster or on a pan with vegan butter until golden brown.
