    Make the Crepe Batter

    In a large mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and sugar until smooth. Let the batter rest for about 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter into the pan and swirl to form a thin, even layer. Cook for about 2 minutes or until the edges start to lift. Flip and cook for another 1 minute. Repeat with remaining batter.

    Prepare the Apples

    In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, and rum. Cook for about 5-7 minutes until the apples are tender and the mixture is syrupy.

Chai Anglaise

    Make the Chai Anglaise

    In a saucepan, combine the milk, cream, and sugar. Heat until just before boiling. Remove from heat and add the chai tea bags. Steep for 15 minutes. In a separate bowl, whisk the egg yolks. Gradually whisk in the warm milk mixture. Return to heat and cook until thickened, about 5 minutes, stirring constantly. Strain to remove tea bags.

Assembly

    Assemble the Crepes

    Spread a spoonful of apple butter on each crepe, then fold or roll up. Serve topped with the warm rum-spiced apples, a drizzle of chai anglaise, crunchy granola, and your choice of meat.
