Method

Pancake Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk until well-blended.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently just until combined; some lumps are okay. Do not overmix.

Cooking Pancakes

  1. 4

    Preheat Griddle

Heat a non-stick griddle or skillet over medium heat. Lightly grease with butter or cooking spray.

  2. 5

    Pour Batter

Using a tablespoon, pour small amounts of batter onto the griddle, forming silver dollar-sized pancakes. Leave enough space between each pancake.

  3. 6

    Cook Pancakes

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

  4. 7

    Repeat Cooking

Repeat the process with the remaining batter, greasing the griddle as necessary.

Serving

  1. 8

    Serve Warm

Stack the silver dollar pancakes on a plate and serve warm with maple syrup on the side.
