Prepare the potatoes
Wash and cut russet potatoes into even thick fries. Soak in cold water for 20 minutes to remove excess starch, then drain and pat completely dry.

Par-cook the fries (optional)
Parboil the cut fries in salted water for 3-4 minutes until just tender. Drain and air-dry completely to remove surface moisture.

Season the fries
Toss fries with cornstarch, 2 tablespoons olive oil, sea salt, pepper, and paprika until evenly coated.

Bake the fries
Spread fries in a single layer on a parchment-lined baking sheet. Bake at 425°F (220°C) for 25-30 minutes, flipping halfway, until golden and crisp.

Finish fries
Toss hot fries with chopped parsley and adjust seasoning to taste.
WAGYU STEAK

Prepare the steak
Let the Wagyu ribeye come to room temperature for 30-40 minutes. Pat dry and season all sides with 1.5 tsp kosher salt and 1 tsp freshly ground black pepper.

Sear the steak
Heat a heavy skillet over high heat with 1 tablespoon neutral oil. When shimmering, add the steak and sear 2-3 minutes per side for rare to medium-rare, depending on thickness.

Baste and aromatics
Add 2 tablespoons unsalted butter, crushed garlic, and thyme to the pan. Tilt and baste the steak with the melted butter for 1-2 minutes per side.

Make pan sauce
Pour off excess fat if needed. Deglaze the pan with red wine, scraping up browned bits. Add beef stock and simmer until reduced by half. Whisk in 1 tablespoon butter, then season to taste.
