Wagyu Hanger Steak

    Prep and season

    Remove steaks from the fridge and let come to room temperature for 20-30 minutes. Pat dry with paper towels. Season generously on all sides with salt and pepper; set aside to rest while you heat the pan.

    Sear and baste

    Heat a heavy skillet (cast iron recommended) over high heat. Add 1 tablespoon neutral oil; once shimmering, add steaks. Sear 2-3 minutes per side for a medium-rare finish depending on thickness. Reduce heat if needed. When flipping, add 2 tablespoons unsalted butter, crushed garlic, and thyme; baste the steaks with the melted butter and aromatics for 1-2 minutes.

    Rest and serve

    Transfer steaks to a cutting board and rest 5-10 minutes to allow juices to redistribute. Slice against the grain if desired and serve with crispy fries on the side.

Crispy Fries

    Prep potatoes

    Peel if desired and cut potatoes into even sticks about 1/4 inch wide. Rinse to remove excess starch, then soak in cold water for at least 30 minutes. Drain and pat completely dry.

    Parboil and coat (optional)

    Optional: boil potatoes 2-3 minutes to soften slightly, then drain. Toss with cornstarch to lightly coat and help crisp; season with a pinch of salt.

    First fry

    Heat oil in a deep fryer or heavy pot to 325°F (165°C). Fry potatoes in batches until just tender and pale, about 3-4 minutes. Remove and drain on paper towels.

    Second fry and season

    Increase oil temperature to 375-400°F (190-200°C). Fry potatoes again until deep golden and crispy, 2-4 minutes. Remove, drain, and season with sea salt, paprika, and garlic powder. Serve immediately.
