Step 1: Prepare the soft serve base
In a medium saucepan, whisk together Whole milk, Heavy cream, Powdered sugar, Fine salt, and Cornstarch until smooth. Add Vanilla extract. Heat over medium-low, whisking often, until the mixture is steaming and just shy of simmering. Do not boil.

Step 2: Chill the soft serve base
Remove from heat and let the base cool to room temperature, then refrigerate for at least 2 hours, or overnight for best flavor and texture.

Step 3: Prepare the sorbet base
In a blender or bowl, combine Seasonal fruit puree, Granulated sugar, Lemon juice, and Water. Blend or whisk until smooth and sugar dissolves. Chill thoroughly for 1 hour.

Step 4: Churn the bases
Pour the chilled soft serve base into your ice cream maker and churn until it reaches a soft-serve consistency, about 20-25 minutes. In a separate batch, churn the sorbet base until firm and scoopable, about 25-35 minutes. If you don’t have an ice cream maker, freeze in a shallow tray and stir every 30-40 minutes until smooth.

Warm the Chocolate sauce and Caramel sauce slightly if needed so they pour easily. Set out Chopped nuts, Fresh berries, and Whipped cream for assembly.
