Base preparation
In a medium saucepan, whisk together 2 cups whole milk, 1 cup heavy cream, 0.67 cups granulated sugar, 0.25 tsp fine salt, and 0.25 tsp xanthan gum (if using). Heat over medium-low, stirring constantly until the sugar is fully dissolved and the mixture is smooth. Do not let it boil.

Remove from heat. Whisk in 2 tsp vanilla extract and 2 tbs light corn syrup until well combined.

Chill base
Pour the base into a clean container. Cover and refrigerate for at least 2 hours, or up to overnight, until completely chilled.

Churn
Pour the chilled base into your cold ice cream maker and churn according to the manufacturer's instructions, typically 20–25 minutes, until thick and soft-serve in consistency.

No-machine method (optional)
If you don’t have an ice cream maker, transfer the chilled base to a shallow container and freeze. Stir vigorously every 30 minutes for 3–4 hours to break up ice crystals, until smooth and soft-serve.

Prepare toppings
Warm the hot fudge and caramel sauces slightly if needed so they drizzle easily. Set out whipped cream, sprinkles, chopped nuts, and cherries within easy reach.

Assemble sundae
Scoop soft-serve into bowls. Drizzle with hot fudge and caramel. Top with whipped cream, sprinkles, chopped nuts, and a cherry on top. Serve immediately.
