Prep and season trout
Rinse the trout and pat dry. Lightly score the skin with a sharp knife to promote even searing. Salt the cavities and street skin with sea salt and pepper.

Sear the trout
Heat olive oil in a large skillet over medium-high heat until shimmering. Place trout skin-side down and press gently to ensure full contact. Cook 3 to 4 minutes until the skin is crisp and the flesh is just opaque halfway up the sides; flip and sear 1 to 2 minutes on the other side. Transfer to a warm plate.
