    Make lobster salad filling

    In a medium bowl, combine the chopped lobster meat with mayonnaise, Dijon mustard, lemon juice, and lemon zest. Stir in finely diced celery, chives, and tarragon. Season with salt and pepper. Mix gently to coat without breaking the meat. Chill for at least 20 minutes.

    Toast brioche buns

    Split the brioche buns and lightly butter the cut sides. Toast in a hot skillet or on a grill until golden and lightly caramelized.

    Assemble lobster buns

    Spread a generous mound of lobster salad inside each toasted bun. Add lettuce or microgreens if desired and cap with the top bun.

    Pour oil into a deep fryer or heavy pot and heat to 350°F (175°C).

    In a bowl, whisk together flour, cornstarch, salt, pepper, paprika, and garlic powder. Gradually whisk in the beer or sparkling water until a smooth batter forms. Pat the angler fish batons dry.
