In a small bowl, combine the finely minced shallots (2 tbsp), red wine vinegar (60 ml), white wine (60 ml), freshly ground black pepper (0.125 tsp), and salt (0.25 tsp). Stir to combine and let the mixture rest for 5 minutes to meld the flavors.
