    In a small kettle, bring 4 cups (960 ml) of water to a rolling boil. If you prefer a lighter cup, adjust to 3 cups (720 ml).

    Place dried chamomile flowers (2 tablespoons), fresh mint leaves (8 leaves), and lemon zest (1/2 teaspoon) in a teapot or heatproof pitcher.

    Pour the hot water over the herb mixture in the teapot. Cover and steep for 7 minutes to extract the floral aroma and bright mint notes without becoming bitter.

    Strain the infusion into two mugs to remove the herbs and zest. If you don’t have a strainer, line a sieve with a clean cloth or napkin.

    Stir in honey (1 teaspoon) and fresh lemon juice (1 teaspoon) to taste. Adjust sweetness and brightness as desired.

    Serve hot. Optional: garnish with a mint sprig or a thin lemon wheel.
