    Prep the fish

    Rinse the sea bream halves under cold water and pat dry with paper towels.

    Season the fish

    Season the fish halves with 0.5 tsp salt and 0.5 tsp black pepper; drizzle 1 tbsp lime juice over them and set aside to marinate briefly.

    Sear the fish

    Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the sea bream halves skin-side down 2-3 minutes until the skin is crisp. Turn and sear 1 minute more. Remove and keep warm.

    Sauté aromatics

    In the same skillet, add the chopped onion, minced garlic, and grated ginger; sauté 3-4 minutes until translucent and fragrant.

    Add spice & coconut

    Stir in Swarnadwipa spice blend and cook for 1 minute. Pour in coconut milk and coconut cream; bring to a gentle simmer.

    Create the sauce

    Add desiccated coconut and sliced red chili; simmer for 3-4 minutes to thicken slightly.

    Finish cooking the fish

    Return the sea bream halves to the pan; spoon sauce over the fish and simmer 5-7 minutes, or until the fish is opaque and cooked through.

    Brighten & serve

    Stir in the remaining lime juice if desired. Season with salt and pepper to taste. Garnish with chopped cilantro and serve with lime wedges.
