    Whisk together olive oil (2 tbs), lemon juice (1 tbs), minced garlic, lemon zest, salt, and black pepper. This creates a bright base to flavor the fish.

    Marinate the rockfish

    Pat the rockfish fillets dry. Brush both sides with half of the marinade and let rest 10-15 minutes while you prep the peppers and olives.

    Make the smoked olive relish

    Roughly chop the smoked olives and combine with chopped parsley and a light drizzle of olive oil. Season with a pinch of salt if desired.

    Prepare the peppers

    Slice Jimmy Nardello peppers into long strips. Toss with a pinch of salt and a touch of olive oil.

    Grill the peppers

    Grill the pepper strips on a hot grill until blistered and tender, about 4-6 minutes, turning once.
