    Soak wooden skewers in water for 20-30 minutes to prevent burning on the grill.

    Make marinade

    In a bowl, whisk together soy sauce, honey, lime juice, minced garlic, grated ginger, sesame oil, black pepper, and salt until well combined.

    Prep pork

    Trim any excess fat if desired and cut pork jowl into evenly sized 1-inch cubes for even cooking.

    Add the pork cubes to the marinade, toss to coat well, and refrigerate for 60 to 180 minutes to absorb flavor.
