Prepare skewers
Soak wooden skewers in water for 20-30 minutes to prevent burning on the grill.

Prep pork
Trim any excess fat if desired and cut pork jowl into evenly sized 1-inch cubes for even cooking.

Add the pork cubes to the marinade, toss to coat well, and refrigerate for 60 to 180 minutes to absorb flavor.

Thread 3–4 cubes onto each skewer, leaving space between pieces for heat circulation.
