Prep and warm equipment
Rinse or swish hot water through your gaiwan, teapot, or brewing vessel and cup to warm them. Discard the warming water.

Measure 3 g of Green Maofeng tea leaves and place them into the warmed gaiwan or teapot.

Heat fresh water to about 80-85°C (176-185°F). Avoid boiling water to protect the delicate green tea flavors.

First infusion
Pour approximately 200 ml of the heated water over the leaves. Start a timer and steep for 60-90 seconds. Then pour the infusion into a serving cup and enjoy the light sweetness, vegetal notes, and gentle spring aroma.

Second infusion
Refill the teaware with fresh water at roughly the same temperature and steep for 25-40 seconds. Pour and savor the brighter, livelier notes that emerge with a shorter steep.

Third infusion (optional)
Repeat with another 40-60 second steep. The leaves will continue to release nuanced notes—grassy, citrusy, and mellow—depending on time and temperature. Adjust steeping time to taste.
