Prepare burger mixture
In a large bowl, combine ground venison with ground pork fat, finely chopped onion, egg, breadcrumbs, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Mix until just combined; avoid overworking the meat.

Chill and portion
Divide mixture into 4 equal portions. Shape into patties about 3/4 inch thick. Chill on a plate for 15 minutes to help them hold shape.

Cook burgers
Cook patties 4-5 minutes per side for medium-rare to medium, or until an internal temperature of 160F (71C) is reached. If using cheese, add a slice on top during the last minute and cover to melt.

Assemble burgers
Spread condiments on the buns if desired, place the cheese-topped patty on the bottom bun, add any toppings (lettuce, tomato, pickles), and cap with the top bun.

Par-fry or bake fries
For crisper fries, par-fry in hot oil at 160°C (320°F) for 4-5 minutes until pale but not colored; drain and let rest on paper towels.

Prepare fish batter
Whisk together flour, cornstarch, paprika, garlic powder, and salt. Gradually whisk in beer or sparkling water until a smooth, thick batter forms.

Dip and fry fish
Heat oil to about 180°C (350°F). Dip angler fish fillets in batter, then fry 3-4 minutes until golden and crisp. Drain on paper towels.

Finish fries and sauce
Increase oven or fryer temperature back to crisp fries if needed. Season fries with salt while hot. Mix tartar sauce with lemon juice and dill (if using) for dipping.
