    Pat the prawns dry with paper towels and season lightly with salt and white pepper.

    Zest one lemon to yield approximately 1 tablespoon of zest; finely chop and reserve.

    Warm the olive oil with the lemon zest in a small skillet over low heat for 2–3 minutes to infuse the oil; remove zest and reserve the infused oil.

    In a wide skillet, heat a tablespoon of the infused oil. Add minced garlic and shallot; sauté until translucent, about 2 minutes.

    Pour Madeira wine into the pan and cook over medium heat until reduced by half, scraping up any browned bits.

    Add prawns to the pan and sear for 1–2 minutes per side until pink and just cooked through.

    Lower heat and add butter; swirl until melted and the sauce becomes glossy.

    Season with sea salt and white pepper to taste.

    Stir in lemon juice and a drizzle of lemon oil; toss to coat the prawns.

    Remove from heat and scatter chopped parsley over the prawns.

    Plate and garnish with microgreens before serving.
