VEGETABLES
- 1
Prep and preheat
Preheat air fryer to 400°F (200°C). If using an oven, preheat to 425°F (220°C).
- 2
Prepare potatoes
Wash, peel if desired, and cut potatoes into even fries. Pat dry thoroughly to remove surface moisture.
- 3
Coat with starch
In a large bowl, toss the potato fries with cornstarch until evenly coated; this creates a crisp exterior.
- 4
Season fries
Add olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne (if using). Toss until all fries are evenly seasoned.
- 5
Cook fries
Spread fries in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking or turning halfway through, until golden and crisp. If using an oven, bake 25-30 minutes, flipping halfway.
- 6
Make pickle ketchup
In a blender or small saucepan, combine chopped dill pickles, tomato ketchup, pickle juice, white vinegar, sugar, water, and salt. Blend until smooth. If using a saucepan, simmer for 3-5 minutes to meld flavors, then cool slightly.
- 7
Finish and serve
Transfer fries to a serving platter and serve hot with pickle ketchup on the side for dipping.
