Making the Base Layer
1. Mix Base Ingredients
In a mixing bowl, combine the pineapple juice, coconut milk, sugar, and blue food coloring. Stir until the sugar is fully dissolved and the mixture is uniform in color.
2. Fill Molds
Pour the base mixture into the popsicle molds, filling them about halfway. Insert the popsicle sticks and place the molds in the freezer.
3. Freeze Base Layer
Allow the base layer to freeze for about 2 hours, or until solid.
Making the Flavor Layer
4. Prepare Strawberry Puree
In a blender, puree fresh strawberries until smooth. If using frozen strawberries, thaw them before blending.
5. Mix Flavor Layer Ingredients
In a separate bowl, combine the strawberry puree, water, and lemon juice. Stir well until fully combined.
6. Add Flavor Layer
Once the base layer is frozen solid, pour the strawberry mixture over the frozen base layer in the molds, filling to the top.
7. Freeze Final Layer
Return the molds to the freezer and freeze for an additional 4-6 hours, or until completely firm.
Serving
8. Unmold Popsicles
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to release the popsicles.
9. Serve
