Prepare the Cucumbers
Wash the Persian cucumbers thoroughly, then cut them in half lengthwise. Using the flat side of a knife or a mallet, gently smash each cucumber half to create cracks, which will help absorb flavors.

Make the Whipped Goat Cheese
In a mixing bowl, combine the goat cheese and heavy cream. Whip together until smooth and creamy. Season with salt and black pepper to taste.

Toast the Pistachios
If not already toasted, place pistachios in a dry skillet over medium heat. Toast for about 5-7 minutes, stirring frequently, until fragrant. Allow to cool and then chop coarsely.

Assemble the Dish
Drizzle a little olive oil over the smashed cucumbers. Spread a generous amount of whipped goat cheese on top of each cucumber half. Sprinkle with chopped pistachios and fresh mint leaves.
