1. Prepare the Pomegranate Granita
In a shallow dish, combine the pomegranate juice and freeze for at least 4 hours or until solid. Scrape with a fork to create a granita texture before serving.
2. Mix the Drink
In a shaker, combine the Animas Mezcal, Genepy liqueur, diced pear, and fresh black pepper. Shake well with ice to chill.
3. Prepare the Garnish
In a small bowl, mix the toasted pumpkin seeds with maple syrup until well coated. Set aside.
4. Assemble the Cocktail
In a glass, add a scoop of pomegranate granita, pour the mixed drink over it, and top with the maple-coated pepitas.
5. Serve
Garnish with additional black pepper if desired and serve immediately with a straw or spoon.
