Directions
- 1
Prepare the Fennel Rub
In a small bowl, combine fennel seeds, salt, and black pepper. Mix well.
- 2
Prepare the Tomatoes
Preheat the oven to 400°F (200°C). Place the halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until soft.
- 3
Prepare the Salmon
Rub the fennel mixture generously over the salmon fillets. Place the salmon on a separate baking sheet.
- 4
Add the Butter and Lemon
Drizzle the melted butter over the salmon and squeeze lemon juice on top. Scatter lemon zest, capers, and fresh dill over the fillets.
- 5
Roast the Salmon
Place the salmon in the oven (alongside the tomatoes if there's room) and roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 6
Serve
Once the salmon is done, remove from the oven and serve immediately with the roasted tomatoes on the side.
