Wine Ingredients
Method
Winemaking Process
- 1
Harvesting Grapes
Harvest ripe Cabernet Sauvignon grapes from the vineyard, ensuring they are free from rot and disease.
- 2
Crushing and Destemming
Crush and destem the grapes to release their juice. This can be done using a grape crusher or by foot stomping.
- 3
Fermentation
Add yeast to the grape juice and allow it to ferment in stainless steel tanks for about 7-14 days, maintaining a temperature of 24-28°C.
- 4
Malolactic Fermentation
After primary fermentation, add malolactic bacteria to convert tart malic acid into softer lactic acid. This typically takes 2-3 weeks.
- 5
Pressing
After fermentation, press the wine to separate the liquid from the grape skins.
- 6
Aging
Transfer the wine to oak barrels or add oak chips for aging. Allow it to age for a minimum of 6 months to develop complexity.
- 7
Bottling
Once aging is complete, filter the wine and bottle it. Add sulfites before sealing to preserve freshness.
- 8
Enjoying the Wine
Let the wine rest in the bottle for a few weeks before enjoying. Serve at a temperature of 16-18°C.
