Make the Dough
In a large bowl, combine flour, sugar, cinnamon, salt, and cocoa powder. Add the egg, wine (or vinegar), and melted butter. Mix until a dough forms.

Knead and Rest
Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for at least 30 minutes.

Roll and Cut
Roll out the dough thinly and cut into circles or ovals. Use a canoli tube or metal forms to shape them.

Fry the Shells
Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.
