Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash the fingerling potatoes thoroughly and slice them in half lengthwise. Toss them in a bowl with 1 tablespoon of olive oil, sea salt, and cracked black pepper. Spread the potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes until golden and tender.

Prepare the Ribeye
While the potatoes are roasting, season the ribeye steak with the remaining tablespoon of olive oil, sea salt, and cracked black pepper on both sides. Let it sit at room temperature for about 15-20 minutes to absorb the flavors.

Cook the Ribeye
Heat a cast-iron skillet over medium-high heat until it is very hot. Add the seasoned ribeye steak to the skillet and sear for 4-5 minutes on each side for medium-rare, or longer if you prefer it more cooked. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

Once cooked to your desired doneness, remove the ribeye from the skillet and let it rest for about 5-10 minutes to allow the juices to redistribute.
