Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash the fingerling potatoes and cut them in half lengthwise. Toss them in a bowl with 1 tablespoon of olive oil, sea salt, and cracked pepper.

Roast the Potatoes
Spread the seasoned fingerling potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes or until golden brown and tender, flipping halfway through.

Prepare the Steak
While the potatoes are roasting, take the USDA Prime Strip Steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Pat the steak dry with paper towels and season both sides generously with sea salt and cracked pepper.

Heat a skillet over high heat and add 1 tablespoon of olive oil. Once the oil is hot, add the steak to the pan. Sear for 4-5 minutes on each side for medium-rare, adjusting the time to achieve your desired doneness.
