    Prepare the Broth

    In a saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.

    Sauté Aromatics

    In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    Cook the Rice

    Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.

    Add Wine

    Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed by the rice.

    Add Broth Gradually

    Begin adding the warm vegetable broth, one ladleful at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle of broth. Continue this process until the rice is al dente, about 18-20 minutes.

    Incorporate Vegetables

    Stir in the seasonal vegetables halfway through the broth addition process, allowing them to become tender.

    Finish with Cheese and Herbs

    Once the rice is cooked and has a creamy consistency, remove from heat. Stir in the grated Parmesan cheese and fresh herbs. Season with salt and black pepper to taste.

    Serve

    Serve the risotto warm, garnished with additional herbs and cheese if desired.
