    Prepare Sushi Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the warm sushi rice and gently fold to combine. Let it cool to room temperature.

    Prepare Ingredients

    Cut the cucumber and avocado into thin strips. If using fresh crab meat, shred it into bite-sized pieces. For the spicy tuna, mix tuna with Sriracha and mayo in a bowl.

    Assemble Sushi Rolls

    Place a bamboo sushi mat on a flat surface and lay one nori sheet shiny side down. Wet your hands to prevent sticking and take a handful of sushi rice. Spread the rice evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Place your choice of fillings (crab meat, spicy tuna, shrimp tempura, cucumber, avocado) in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the nori away from you while tucking the filling in. Roll tightly but not so tight that the rice squeezes out. Use a little water to seal the edge of the nori.

    Slice the Rolls

    With a sharp knife, slice the roll into bite-sized pieces. Wet the knife between cuts to ensure clean slices.

    Serve

    Arrange the sushi rolls on a plate and garnish with sesame seeds. Serve with soy sauce, wasabi, and pickled ginger on the side.
