Method

Preparing the Shrimp

  1. 1

    Marinate the Shrimp

In a bowl, combine the peeled and deveined shrimp with olive oil, salt, and black pepper. Let it marinate for about 15 minutes.

  2. 2

    Grill the Shrimp

Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers and grill for about 2-3 minutes on each side or until they are opaque and cooked through.

Making the Crostini

  1. 3

    Prepare the Baguette

Preheat the oven to 400°F (200°C). Arrange the sliced baguette on a baking sheet.

  2. 4

    Season and Bake

In a small bowl, mix the minced garlic with 4 tablespoons of olive oil. Brush this mixture onto both sides of the baguette slices. Bake in the oven for about 10-12 minutes or until golden and crispy.

Preparing the Salad

  1. 5

    Combine the Vegetables

In a large bowl, combine the diced tomatoes, sliced cucumbers, and shaved Bermuda onion. Toss gently to mix.

  2. 6

    Make the Dressing

In a small bowl, whisk together balsamic vinegar, 1 cup of olive oil, salt, and black pepper.

  3. 7

    Combine Everything

Add the grilled shrimp to the vegetable mixture. Drizzle with the balsamic dressing and toss to coat evenly.

Serving

  1. 8

    Plate the Dish

Serve the shrimp panzanella on a platter or individual plates, garnished with the garlic crostini on the side. Enjoy!
