    Prepare the Ingredients

    Begin by prepping all your ingredients. Rinse and chop the vegetables, cube the tofu, and ensure the shrimp are peeled and deveined.

    Cook the Tofu

    Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add another tablespoon of sesame oil. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside with the tofu.

    Stir Fry the Vegetables

    Add the remaining tablespoon of sesame oil to the skillet. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the diced carrots, bell pepper, and frozen peas. Stir-fry for about 5 minutes, or until the vegetables are tender but still crisp.

    Scramble the Eggs

    Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked, about 2-3 minutes.

    Combine Everything

    Add the cooked rice, shrimp, and tofu back into the skillet. Pour in the soy sauce and toss everything together to combine. Cook for another 2-3 minutes, stirring frequently.

    Season and Serve

    Add chopped green onions and season with salt and pepper to taste. Stir well and serve hot.
