    Prepare the Ingredients

    Start by preheating your oven's broiler. Clean the wild mushrooms and slice them into bite-sized pieces. Trim the leeks, slice them in half lengthwise, and then chop them into thin slices. Rinse the fresh basil leaves and pat them dry.

    Season the Salmon

    Pat the salmon fillets dry with a paper towel. Rub each fillet with olive oil and season both sides with salt and black pepper.

    Broil the Salmon

    Place the seasoned salmon fillets on a broiler pan or baking sheet lined with aluminum foil. Broil the salmon in the preheated oven for 6-8 minutes, or until the fish flakes easily with a fork and has a golden crust on top.

    Sauté the Vegetables

    While the salmon is broiling, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped leeks and sauté for about 3 minutes until they begin to soften. Then, add the wild mushrooms and continue to sauté for another 5-7 minutes, until the mushrooms are tender and have released their moisture.

    Make the Sauce

    Pour the heavy cream into the skillet with the sautéed leeks and mushrooms. Stir gently to combine and let it simmer for 2-3 minutes until the sauce thickens slightly. Add salt and pepper to taste.

    Serve

    Once the salmon is done, remove it from the oven. Place a salmon fillet on each plate and spoon the mushroom and leek sauce over it. Garnish with fresh basil leaves before serving.
