Prepare the Crepe Batter
In a large mixing bowl, whisk together the flour, milk, eggs, salt, and vanilla extract until the mixture is smooth and well combined. Let it rest for 30 minutes to allow the gluten to relax.

Make the Crepes
Heat a non-stick skillet over medium heat and add a small amount of butter. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another minute. Remove the crepe and repeat with the remaining batter, stacking the cooked crepes on a plate.

Prepare the Filling
In a mixing bowl, combine the ricotta cheese and granulated sugar. Mix until smooth and creamy. Set aside.

Fill the Crepes
Take one crepe and place about 2 tablespoons of the ricotta mixture in the center. Fold the sides over the filling, then roll it up tightly like a burrito. Repeat this process for all crepes.
