Prepare the Ham
Preheat your oven to 325°F (165°C). Score the surface of the bone-in ham in a diamond pattern, about 1/4 inch deep. Rub the ham with 1 tablespoon of salt and 1 tablespoon of black pepper, making sure to get it into the scored cuts.

Roast the Ham
Place the ham in a roasting pan and bake in the preheated oven for approximately 15 minutes per pound, or until the internal temperature reaches 140°F (60°C). Baste the ham with its juices every 30 minutes.

Prepare the Roast Beef
Rub the roast beef with olive oil, garlic powder, onion powder, and the remaining salt and black pepper. You can also add fresh rosemary and thyme for added flavor.

Sear the Roast Beef
In a large skillet over medium-high heat, sear the roast beef on all sides until browned, about 4-5 minutes per side.

Rest the Meats
Once the ham and roast beef are done, remove them from the oven and let them rest for at least 20 minutes before carving. This allows the juices to redistribute.

Carve and Serve
Using a sharp carving knife, slice the ham and roast beef against the grain. Arrange the slices on a serving platter and serve with your choice of sides.
