Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

Preheat the Grill
Preheat your grill or charbroiler to high heat (about 450°F to 500°F).

Grill the Filet Mignon
Place the seasoned filet mignon on the grill. Cook for about 4-5 minutes on one side, until a crust forms. Flip the filets and cook for another 4-5 minutes for medium-rare, or until the desired doneness is reached.

Add Butter
During the last minute of cooking, add butter on top of the filets to baste and enhance the flavor.

Rest the Meat
Once cooked, remove the filets from the grill and let them rest on a plate for 5 minutes, allowing the juices to redistribute.

Serve the filet mignon immediately, garnished with additional rosemary if desired.
