Prepare the Lobster
In a large pot of boiling salted water, add the lobster meat. Cook for about 5-7 minutes until tender. Remove the lobster and let it cool slightly before chopping it into bite-sized pieces.

Cook the Pasta
In the same pot, add the macaroni pasta and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until golden. Gradually whisk in the milk and heavy cream, stirring continuously until the mixture thickens, about 5-7 minutes.

Add the Cheeses
Reduce the heat to low and stir in the cheddar, Gruyere, and Parmesan cheeses. Continue stirring until all the cheese has melted and the sauce is smooth. Season with salt and black pepper to taste.

Combine Pasta and Lobster
Add the cooked macaroni pasta and the chopped lobster meat to the cheese sauce, stirring gently to combine all ingredients.

Finish with Truffle Oil
Drizzle the truffle oil over the mixture and fold in the black truffle shavings for an extra touch of luxury.
